Tinga
Description
You will be making Tinga. Yummy!
Ingredients
- 4 chicken breast halves
- 1 tablespoon canola oil
- 2 medium tomatoes, chopped
- 3 jalapeƱo pepper, seeded & chopped
- 1/4 medium onion, chopped
- 8 corn tortillas, warmed
- 1 cup canola oil
Steps
- Place chicken in large saucepan with enough water to cover. Boil, and cook chicken until tender. Remove from heat, drain and cool.
- Heat 1 tablespoon of canola oil in skillet over medium heat. Saute tomatoes, jalapeƱos and onions until soft. Remove bones, shred and throw in skillet with tomatoes and peppers. Fry for a few minutes.
- Heat cup of canola oil in clean skillet over medium-high heat. Fill each tortilla with 1/4 cup of chicken mix, roll into cylinder. Fry tortillas in hot oil until golden, turning once. Drain on paper, and serve with sour cream / salsa / both.
