  1. Place chicken in large saucepan with enough water to cover. Boil, and cook chicken until tender. Remove from heat, drain and cool.
  2. Heat 1 tablespoon of canola oil in skillet over medium heat. Saute tomatoes, jalapeƱos and onions until soft. Remove bones, shred and throw in skillet with tomatoes and peppers. Fry for a few minutes.
  3. Heat cup of canola oil in clean skillet over medium-high heat. Fill each tortilla with 1/4 cup of chicken mix, roll into cylinder. Fry tortillas in hot oil until golden, turning once. Drain on paper, and serve with sour cream / salsa / both.
